Origin
The sturgeon is the oldest
alive aquatic animal on Earth, with more than 250 million years old.
Twenty-six species of sturgeon filled rivers and seas not long ago. At
present, the greatest reserve of sturgeons is found in the
Caspian Sea. Nevertheless, the species that live there are in
serious danger of extinction.
Nowadays many species have extinguished due to the process of industrialization that has
affected the quality of the water. Moreover, the construction of
dams has prevented this fish to go upriver, thus blocking its cycle vital.
Caviar Nacarii aims to
recover this animal in the Garona River, where sturgeons could be
found until the beginning of the last century. The species that has been
chosen is Acipenser Baeri, also denominated sturgeon of Siberia. It has been demonstrated that
its caviar and meat are of magnificent quality.
