The optimal moment for the extraction of the sturgeon
spawn is critical for the caviar quality. This extraction is
preceded by biopsies and scanners of every single sturgeon female.
Caviar
Nacarii is a fresh caviar. The product,
unlike most of the caviars in the market, does not pass through any
treatment of heat or pasteurization. Therefore it has only three
months shelf life. Thiss guarantees the freshness of the product,
one of its characteristic and differentiating qualities.
We suggest to consume the product at the moment of
its purchase. Otherwise, it is recommended to keep it between -4ºC
and 0ºC, to conserve it in the best conditions. The grain of fresh
caviar will be loose, have a firm texture, a certain brilliance and
a smooth taste.

Taste
To make sure that the product reaches the taste
buds maintaining all its organoleptical
qualities, it is recommended to take it with nacre
spoon, or plastic spoon (even though this last option lacks in
glamour). The most sybarites taste the caviar straight from the
back of the hand.
Caviar is served fresh, not cold. It is advisable to
get it out of the refrigerator and open it a few minutes before
its consumption. Nevertheless, keep it alsways on a layer of
ice.
The ideal partners for caviar are vodka and
champagne. They will clean the taste buds after each spoonful of
caviar and leave them ready to enjoy the following tasting.
